A Grantham company has doubled in size in the wake of a surge in demand from hungry workers at firms in and around the town.

Victoria and Nathan Nicholas-Barry launched The Lunch Box two years ago supplying hot and cold meals to firms in the town.

We could never have predicted that the business would grow as fast as it has.

Equipped with one van and with the food prepared in their garage, which had been converted into a kitchen, Nathan was kept busy each day supplying lunches to staff at 60 businesses across the town.

Now the couple, of Northcliffe Road, have acquired a second van and have recruited two members of staff - a driver and kitchen staff.

They make nearly 140 deliveries a day selling a daily average of 220 rolls.

However, that figure soars on a Friday to an amazing 400.

Nathan said: “I think people just like to treat themselves on a Friday.

“Instead of making their own lunch they like us to bring it to them.

“We are always really busy on a Friday and it is difficult to keep up.”

The couple set up their business when Nathan decided he wanted to see more of his children and spend less time on the road in his sales job.

Nathan, who has plenty of experience in the catering industry, converted the garage into a kitchen and secured a five-star food hygiene rating - which was renewed by Environmental Health officers last month - and has not looked back since.

He said: “We could never have predicted that the business would grow as fast as it has.

“It is hard work but we are really pleased. It is great to have so many wonderful and loyal customers.

He said: “It is competitive out there.

“We’re successful because we keep the food fresh. The bread is made by Bloomsbury Bakery, in Grantham, and delivered daily. All the meals are made by us every morning. I also think people like to see a friendly face.”

Victoria said: “We are absolutely thrilled and surprised at the way the business has taken off.

“I think we have been so successful because we are good at what we do.”

Each day the couple prepare a new menu offering customers eight different fillings.
